My husband and I eat Buddha bowls for lunch almost every single day. It’s a great way to use up leftovers or random vegetables from the garden. Since we eat these A LOT, I find myself frequently needing to come up with new sauces to keep things fresh and interesting. I’m especially proud of this latest creation and am sure it will become a favorite of yours as well!
Ingredients:
- 1 cup raw unsalted cashews
- 1 cup water
- 1/4 cup red miso
- 1 Tablespoon rice vinegar
- 1 Tablespoon sesame oil
Instructions:
- Add all ingredients into your Vitamix or high speed blender and blend on high until smooth
- Pour onto your favorite bowl or salad and enjoy!
